This is (hopefully) the start of a new series - Sunday Suppers. Where I used to cook almost seven nights a week, it has now dwindled down to about one...usually on Sunday. I would love to cook more but life has gotten in the way. To balance a work week filled with take-out and prepared foods from our local market, I try to make a fresh, healthy dinner on the weekends.
These were light and delicious and would be ideal for a summer dinner. But the meatballs were also comforting and filling for a chilly winter night.
